They only take a few minutes and are easy to make.

Mum’s Delicious Pancakes

  • 1 1/2 cups flour
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • 3/4 teaspoon salt
  • 1 egg, beaten
  • 2-3 tablespoons oil
  • 1 teaspoon vanilla
  1. Mix all of the dry ingredients together.
  2. Add milk, vanilla, egg and oil
  3. Mix well and try to get some of the lumps out of the batter.
  4. Don’t worry about making it perfectly smooth, don’t over beat.
  5. Heat a skillet on medium heat, adding a little oil in the bottom of pan.
  6. Scoop the batter into the frying pan with a large spoon to make several individual pancakes. The pan will probably only take 1 or 2 pancakes at a time.
  7. Cook on one side until the top begins to bubble, then turn to the other side.
  8. Serve with butter and your favorite pancake syrup.

Enjoy your breakfast!
