Omelette with a Twist

A new way to fix your eggs that will leave you wanting to try more.

When I get too bored of eating the same kind of omelette over and over, i turn a few things around. This is a Chicken Sausage cheese omelette that you have to try.

What you need is:

2 Eggs

1 Onion

1 Green Chili

1 Chicken Sausage

2 Slices of cheese

Milk

Pepper

Salt

Butter / Oil

  • To begin with, Beat the eggs in a bowl. Once the eggs are beaten light, add about a table spoon of milk. Whip the eggs once again. Keep it aside.
  • Slice the chicken sausages, onions and green chilli.
  • In a pan take a dash of oil and add the Butter. Let the butter melt before adding sausages. Stir the sausages till they are cooked. Add Onions and chilli and toss lightly in the oil/butter. 
  • Once the onions soften, add salt and pepper.
  • Pour the Egg and milk mix in the pan slowly so that it covers over the sausages and onions. Cover the pan with a lid and  let it cook over a simmer setting.
  • In about two minutes, the omelette is almost half done. Take off the lid and place the cheese slices on top so that it cover the entire omelette. (You may even cut strips of the cheese slices and place them to form a lattice or grid just for fun)
  • Cover the pan once again and let it further cook for another 2 min.
  • Take off the lid. Check whether the omelette’s done by pricking it with a knife or a toothpick right in the centre. If the toothpick comes out clean then its done.
  • Take the omelette off the pan and onto a plate.

And its done.

Adding milk makes it fluffier and lighter. Milk also gives it a certain melow taste that counters the chili and pepper beautifully.

Try this omelette with mushrooms instead of sausages if you are a vegetarian. It tastes just as good.
