Original Pancakes

A recipe for those original pancakes you love. Makes a batch of about nine 4-inch pancakes.

Ingredients

  • 1 egg
  • 1 cup of flour
  • 3/4 cup of milk
  • 2 tablespoons of shortening
  • 1 tablespoon of sugar
  • 3 teaspoons of baking powder
  • 1/2 teaspoon of salt

Method

  1. Beat egg with hand beater until fluffy; beat in remaining ingredients until smooth.  For thinner pancakes, stir in additional 1/4 cup of milk.  Grease heated griddle if necessary.
  2. Pour about 3 tablespoons of batter from tip of large spoon or from pitcher onto hot griddle.  Cook pancakes until puffed and dry around edges.  Turn and cook the other side until golden brown.
