Perfect Light Pancakes

Ingredients

  • 2 c. self-rising flour
  • 2 tsp. baking powder
  • 1 Tbsp. sugar
  • 1/4 c. Canola oil
  • 1 egg
  • 1 2/3 c. 2% milk

Method

Mix together the oil, egg and milk, stirring well. Add the flour, baking powder and sugar. Stir until smooth. Let stand for 20 to 30 minutes. Pour 1/4 cup of pancake batter onto a hot griddle. Turn over when bubbles form over top of the pancakes and the edges appear to be cooked. Top pancakes with margarine and syrup.
