Potato Omelet

A wonderful breakfast recipe.

Ingredients

  • 2 potatoes, peeled and diced
  • 1/4 cup olive or canola oil
  • 1/2 cup green onions, sliced
  • 1/4 cup fresh parsley, minced
  • 1 garlic clove, minced
  • 6 eggs
  • 1/4 cup water
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • sour cream, optional
  • cooked bacon, crumbled, optional

Method

Heat the oil and cook potatoes for 10 minutes or until golden brown, stirring
occasionally.  Add the onions, parsley and garlic; cook until tender. 
Beat the eggs, water, salt and pepper.  Pour over the potato mixture, cover
and cook for 8 to 10 minutes or until completely set.  Cut into wedges and
serve with sour cream and bacon.
