Puffed Oven Pancakes
I have made this for my family nearly every Sunday for the past 10 years. We love it! It’s so easy to make and it’s a great way to get the morning off to a good start.
Ingredients
- 12-inch cast iron skillet
- 1.5 Cups whole wheat flour
- 1.5 Cups milk (I use powdered milk)
- 6 eggs
- 2T butter
Method
Heat oven to 450F. Place skillet into oven (to pre-heat). Beat eggs until frothy (as fast as you can beat them for a couple minutes without splattering all over). Add milk. Beat on slow/medium to well mixed. Put the butter into the skillet (which should be hot by now). Add flour to egg/milk mixture and beat until reasonably smooth. Keep an eye on the butter so it doesn’t burn. As soon as butter is all melted, take skillet out of oven, pour the mixture into the skillet, and place skillet back in oven. Bake for 10 minutes. Turn heat down to 350F and bake for 10 more minutes. Serve with maple syrup, apple sauce, or any topping of your choice.
You can try different kinds of flour. Sometimes I’ll add apple slices to the mixture. You can experiment with the temperatures, too. Sometimes I’ll bake at 450 for 12 minutes and then 350 for 7 minutes.
