Quinoa Muesli for Breakfast
Quinoa is a seed that is not used as often as it could be so if your regular breakfast is beginning to become tiresome have a go at this delicious healthy hot quinoa muesli instead.

Quinoa seeds are low GI but is of higher protein content (12% to 18%) than regular oatmeal porridge and is naturally gluten-free and has a somewhat nutty taste so if your regular porridge just doesn’t seem to get you through till lunch time then maybe you should give quinoa a try.

Ingredients
- 1 Cup of Cooked Quinoa
- 1½ Cups of Milk
- 10 Dried Apricots
- 3 Tablespoons of Sultanas
- 2 Tablespoons of Honey
- 1 Tablespoon each of Dried Cherries, Dried Apple Slices, Pecan Nuts, Walnuts and wheat bran (and optionally brown sugar)
- 1 Pinch of Cinnamon
Method
- In a medium mixing bowl add the cooked quinoa and the milk. Give it a really good stir. Then cover with plastic cling wrap and pop it into the refrigerator to soak for at least 2 hours. Overnight would be ideal.
- When ready to eat pour quinoa and milk mixture into a pot and heat. I guess you could nuke it. I have never tried so I can’t tell you how that would turn out.
- While the quinoa and milk are heating dice the apricots and the dried apple slices. Then crush the pecans and walnuts. Chop the cherries into quarters. Put all of the fruit and nuts into a bowl then add in the sultanas and give the mixed fruit a quick stir.
- Once the quinoa and milk are nice and hot add in the honey and stir to ensure that the honey is fully dissolved. Then sprinkle and stir in the wheat bran. Once this is mixed in add the mixed fruit and stir. You want to keep the heat so that the milk is simmering and not boiling so adjust as necessary.
Serving
Once all ingredients are mixed remove from heat, sprinkle with cinnamon and serve. We usually have a pot of honey to add as we please while eating. It’s up to the individual really. A teaspoon of brown sugar sprinkled over the quinoa muesli once it is in your cereal bowl also goes down a treat.
These portions should be enough for 2 people or one very hungry one. Enjoy!!!
