The recipe for the perfect breakfast that "cooks" while you sleep.

I love eating breakfast but I hate waking up and cooking in the morning. For years, I had some sort of prepackaged sweet for breakfast (Pop Tarts, pastries, etc) and coffee.

I kept thinking to myself, if my coffee machine has an overnight timer, why can’t I find something else that cooks overnight for my breakfast, too? I looked online for crockpot recipes but they were all for multiple servings.

And then my friend pointed me to this recipe for Overnight Oatmeal. It serves four, but it looked like it had potential. So I set out on a week of tweaking and discovered the right proportion to mix for a single serving. Here it is:

3/4 cup old fashioned oats

2/3 cup light vanilla soy milk

2 tablespoons dried fruit and nuts

Fruit and nut ideas include, but are not limited to: raisins, dates, figs, cherries, cranberries, slivered almonds, cashew pieces, walnut pieces, hazelnuts.

Mix the above in a covered dish and place in the refrigerator for at least 6 hours. Eat cold, or put it in the microwave for 45 seconds to warm. Add sugar or honey if desired.
