Santa Fe Breakfast Burritos

Welcome to the Land of Enchantment! Santa Fe Breakfast Burritos are a very easy and quick dish. Always popular in the Southwest, Santa Fe Breakfast Burritos have migrated to other parts of the US. Breakfast favourites eggs, bacon and potatoes are rolled up in a tortilla or stuffed into a pita bread.

Breakfast burrito (Blake’s Lotaburger http://www.lotaburger.com/)

Note: Santa Fe Breakfast Burritos can easily be made vegetarian. Simply omit the meat and add other vegetables such as sweet bell peppers and more onions. 

Ingredients

(For two servings)

  • 4 strips of bacon (or the same amount of ham cut into matchsticks)
  • 1–1/2 c of cooked potatoes, diced
  • 1/2 an onion diced or sliced thin
  • 4 eggs, beaten (seasoned with salt and pepper to taste)
  • red or green chile sauce, warmed
  • 2 large flour tortillas*, warmed
  • grated cheddar-type or colby cheese

Method

Fry the bacon strips in a heavy frying pan until crisp or fry the ham matchsticks if used. Drain and let cool. In the bacon fat, fry the diced potatoes until light golden brown. Add the onion and fry until the onion and the potatoes are well browned. Remove the potato mix and keep warm. Scramble the eggs in the same pan, adding more fat/oil if needed. Crumble the cooked bacon and add to the scrambled eggs. Mix in the potatoes and onions. Warm the Santa Fe Breakfast Burrito mixture  through.

To serve:

Place a warmed tortilla on a plate and spread chile sauce nearly to the edge. Top with half the egg-bacon-onion mixture in the centre and a little more sauce if needed. Sprinkle grated cheese over the filling. Fold in the sides of the tortilla to the middle and roll up from one end. Place the seam side down. Serve very hot. The Santa Fe Breakfast Burritos can be made ahead of time and rewarmed in the microwave, covered to prevent drying out. For real chile phreaks, top the Santa Fe Breakfast Burritos with more chile sauce and cheese.

*If no tortillas are available, use pita breads warmed and split along the long edge. Spoon in some chile sauce and add the filling.
