Scrambled Eggs: Low Gi

This is a really easy and yummy way to make scrambled eggs. It has low Gi so is great if you watch what you eat.

Ingredients 

2 x Eggs

1 slice of wholemeal bread

1 tsp butter

Black pepper

Instructions

1. Melt the butter in a frying pan

2. Add the eggs and stir on a medium heat

3. Add the pepper and salt if desired

4. Toast your bread whilst the eggs are cooking

5. Take the eggs off the heat once cooked and put on top of the toast

It’s simple, but it’s a lovely breakfast. I think a lot of people cook eggs in oil, but the butter makes it lovely and creamy.
