Southwestern Breakfast Bash: Bacon, Eggs & Potatoes

A whole meal that comes together quite easily and unhealthily!
I just reposted this one with actual images of the delight. It should give a better idea of how ridiculous the meal is!
WARNING: This is not very healthy, but very very good
This is a three part meal
- Potatoes
- Hot Sauce Bacon
- Breakfast Burrito
Ingredients
Part 1: Potatoes
- 3 Medium Potatoes
- 2 Slices of Bacon, the thicker the better
- 1/2 cup diced onions
- almost a tbsp garlic
- 1 tbsp. Old Bay
- 1 tbsp. Mrs. Dash
- 1 tbsp. Black Pepper

Part 2: Hot Sauce Bacon
- 6 Slices of Bacon (I prefer Low Sodium)
- Several splashes of Frank’s Hot Sauce
- 2 tsp. Cumin
- 2 tsp. Paprika
- 2 tsp. Black Pepper
Part 3: Breakfast Burrito (1 serving = 2 eggs)
- 2 Eggs per serving
- 1 Chipotle pepper diced
- 1/4 cup diced onions
- 1/4 cup diced green bell pepper
- 1/4 cup Chicken, Pork, or Beef (Pork in this instance, and it was left over, so meat’s optional)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp. chile powder
- 1 little handful of Cheddar Cheese
- 1 Big handful of Cheddar Cheese
- 1 Large Burrito Tortilla
Method
- Preheat Oven to 350
- Heat pan to medium heat and toss in he bacon
- Chop potatoes in half then chop in to bite size bits
- While Bacon browns, place 6 strips of bacon on a baking tray with foil
- Splash bacon with hot sauce and rub in until covered
- Mix Cumin, Paprika, and Black Pepper. Then evenly sprinkle over the bacon
- Put bacon in the oven for 20 minutes
- Remove bacon when done to your liking and drain on paper towels
- When bacon in pan has browned and yielded all its juices, remove from pan and crush up
- Toss in the onions for the potatoes, and the garlic
- Stir onions and garlic in bacon fat until browning begins, then put in the potatoes
- The potatoes will take about 25 minutes on medium high heat, once they’re nice and browned lower the heat to medium or medium low depending on how fast they’re cooking (Also if they’re sticking you can add olive oil)
- If they’re beginning to burn, pour in a little water, less than a 1/4 cup and keep doing so until potatoes are done and moist
- When the potatoes are done put them on low heat
- Top potatoes with crushed bacon bits and prepare the eggs
- Crack 2 eggs into bowl and whisk
- Pour onions, bell peppers, small handful of cheddar cheese, and chipotles(and meat if you’re using it) into beaten eggs
- Heat pan to medium heat, and spray with cooking spray
- Cook eggs for about 3 minutes, flip like an omelet
- Cook evenly then chop it up like scrambled eggs and pour it into your burrito
- Roll up the Burrito, plate your bacon and potatoes and enjoy!
It’s most certainly not the healthiest of recipes, but it’s ridiculously good!
