Swiss Omelet

A great way to start your day.

Ingredients

2 cups red onion, chopped
2 tsp. sugar
1 tbs. olive or canola oil
1/4 cup green onions, chopped
2 tsp. dijon mustard
1/2 tsp. dried thyme
6 eggs
1/4 cup water
1/4 tsp. salt
14 tsp. pepper
1 (4oz) cup swiss cheese, shredded

Method

Using a 10 inch oven proof skillet, sauté red onion and sugar over a medium heat for 10 to 12 minutes.  Remove 1/4 cup and set aside.Add the green onion, mustard and thyme to the skillet and mix welland remove from heat.  Beat the eggs, water, salt and pepper. Pourinto the skillet and sprinkle with 1/4 cup of cheese.  Bake in a375 degree oven for 10 to 15 minutes.  Top with the remainingonions and cheese.  Cut into wedges.
