The Quick, Easy, and Healthy Burrito

Are you looking for a recipe which is quick, easy, and healthy? Do you also want a breakfast which is fulling and nutritious so you can get ready for your big days?

Ingredients:

  • some butter for frying
  • 1 egg
  • 1 Tbsp. Water or milk
  • dash of salt
  • 1 flour tortilla

Filling/Toppings

Grated cheese
Chopped tomato
Chopped green onion
Salsa
Shredded lettuce
Sour Cream

Method:

  1. Whip together all eggs and water. Add a dash of salt.
  2. Melt butter in skillet (burner set to #5) being careful not to burn the butter
  3. Scramble eggs with wooden spoon or rubber spatula
  4. Warm tortillas in microwave between sheets of slightly damp paper towels (15 to 20 seconds)

Everyone:

Fill center of warm tortilla with scrambled eggs and filling. Don’t overfill or it will be too difficult to fold! Fold into burrito (bottom folded up, sides folded into center).
