Ye Olde English Fluffy Eggs: A Healthy Recipe

The original medieval recipe for English Fluffy Eggs was a taste delight and brilliant in its simplicity. Think of this update as one example of the healthy evolution of pre-Renaissance cooking.

Legend has it that the breakfast that gave Ann Boleyn that extra lift on her dire day, was Henry’s favorite fluffy eggs recipe, -served with white tea, and browned wheat bread.  Ann wouldn’t have had much concern for the healthy nature of the ingredients of her last meal, but anyone planning a future will enjoy this enlightened healthy recipe for Old English Fluffy Eggs.

  1. Crack five eggs into a bowl saving all the whites, but only two of the yolks.
  2. Add a pinch or two of salt and one of pepper
  3. Add one-quarter cup of fat free milk and blend until smooth
  4. Melt two or three teaspoons of Smart Balance™ spread in a small to medium fry pan
  5. Heat pan until Smart Balance™ is crackling – spread around pan
  6. Pour egg mixture into hot pan and let settle for about 15 seconds
  7. Begin to slowly-stir eggs with a two- inch spatula giving the uncooked eggs an opportunity to flow to the bottom of hot pan
  8. Turn off heat as soon as eggs begin to solidify
  9. Continue to slowly-stir eggs until almost all of the liquid is absorbed into a fluffy egg cloud.

Serves two nicely.  Don’t forget the toast.
