Yummy and Healthy Egg Scramble

This recipe is very good and filling too. It’s great for breakfast as well as brunch.

Ingredients

  • ¾ cup diced, peeled potatoes
  • ¼ cup chopped, green pepper
  • ¼ cup chopped, red pepper
  • ¼ cup chopped, onion
  • 1 tsp. oil
  • 1 cup cooked, ham, cubed
  • 8 eggs
  • 1/3 cup sour cream
  • ¼ cup milk
  • ½ tsp. onion salt
  • ½ tsp. garlic salt
  • ½ tsp. pepper
  • 1 cup shredded cheese

Preparation

  1. Put potatoes in small pot and cover with water.
  2. Boil, reduce, cover and simmer 10-15 minutes. Drain.
  3. In skillet, sauté peppers and onion in oil, until tender.
  4. Add ham and potatoes for 2-3 minutes.
  5. In blender, mix eggs, sour cream, milk and salts and pepper, process until smooth.
  6. Pour mix over veggies, cook and stir over medium heat, until eggs are set.
  7. Sprinkle with cheese.
  8. Serve!
