Yummy and Healthy Egg Scramble
This recipe is very good and filling too. It’s great for breakfast as well as brunch.
Ingredients
- ¾ cup diced, peeled potatoes
- ¼ cup chopped, green pepper
- ¼ cup chopped, red pepper
- ¼ cup chopped, onion
- 1 tsp. oil
- 1 cup cooked, ham, cubed
- 8 eggs
- 1/3 cup sour cream
- ¼ cup milk
- ½ tsp. onion salt
- ½ tsp. garlic salt
- ½ tsp. pepper
- 1 cup shredded cheese
Preparation
- Put potatoes in small pot and cover with water.
- Boil, reduce, cover and simmer 10-15 minutes. Drain.
- In skillet, sauté peppers and onion in oil, until tender.
- Add ham and potatoes for 2-3 minutes.
- In blender, mix eggs, sour cream, milk and salts and pepper, process until smooth.
- Pour mix over veggies, cook and stir over medium heat, until eggs are set.
- Sprinkle with cheese.
- Serve!
