Yummy Coconut Pancakes Named as Thanjavur Thengaipuri in South India

Makes: Eight to nine pancakes

Time Required: 40 minutes plus resting time

Ingredients Required:

 

For the pancakes to prepare:

·         180 to 200gm of flour

·         45 to 50 gm of rice flour

·         380 to 400ml of milk

·         100 to 120 ml, coconut milk

·         2 tablespoon (30 gm) sugar

·         1/2 tablespoon (2 gm) salt

·         Two eggs

·         Two tablespoon (30 gm) butter ghee

For the filling:

·         200 to 225 gm of grated coconut

·         50 to 60 gm of sugar

·         1/2 tablespoon (2 gm) cardamom powder

Method:

·         Mix all the ingredients for the pancake, except butter and ghee, thoroughly so that you can obtain a smooth batter.

·         Than keep batter aside for an hour.

·         Heat a little butter in a nonstick pan and make thin pancakes, till done on both the sides.

·         Mix the ingredients for the filling.

·         Put a little filling over each pancake, roll, and seal the sides and shallow fry in hot ghee till golden brown.

·         Serve warm, dusted with icing sugar.

·         Calories: 499.5 kcal.

·         Proteins: 10.2 g.

·         Fat: 31.6g.

·         Minerals: 1.3 g.

·         Fibre: 1.1 g.

·         Carbohydrates: 40.7 g.

    mmm..sounds yummy! I have just discovered that I actually like coconut and I may have to try this recipe!
    It sounds a lot like crepe’s and it also resembles the way a pumpkin roll is made…..now I’m hungry! lol
