You don’t necessarily have to use noodles to have spaghetti. You could use spaghetti squash. Spaghetti squash is one of the early winter squash varieties and it is a versatile squash. It is fun to serve and eat in a variety of ways but I like it best as a tossed warm salad.

Tuna Jack Quesadilla

A quesadilla makes a great lunch or a tasty appetizer to serve before your main entree. They are easy to make and they are fun to eat. This is my own creation and it came out really well. I was going to make toasted tuna rolls for lunch and found my rolls had molded but I had tortillas so I got creative and these are so good I just may give up toasted tuna rolls. The only real changes I made was I used tortillas instead of a roll and left out the mayonnaise. It is simple, easy and good. You can use whatever cheese you like but I like Pepper Jack or Cheddar with Tuna. The compliment each other well.
