I love sweet potatoes and use them in many different ways but I had never made a salad with them; that is until now. My neighbor had some left over sweet potato salad from their family cook out over the weekend and invited me over for dinner. She said, “Come over and help me eat up these leftovers so I won’t have to throw it out.” We share a meal off and on including leftovers. You know, “waste not, want not.” I went to dinner and I’m glad I did because this salad is so good. She was nice and gave me the recipe. I will be making this often this summer. It is really different and really delicious, especially with those barbecued short ribs we reheated and her lemon iced tea with just a hint of ginger. It was a great meal. Take two tablespoons ghee. Fry cummin seed and add powdered aniseed, dried gingeer and pepper and half cup water. Bring to boil and add the pumpkin.
