Almond Cookies

Budget friendly almond cookies are easy to make treats that are equally at home in the cookie jar, a mixed plate of cookies, with a beverage on your coffee break, as lunch box treats or just as anytime pick-me-up nibbles.

Almond Cookie Ingredients:
- 1¾ Cups (260g) of Sifted Plain Flour
- 1 Cup (250g) of Softened Butter
- 1 Cup (230g) of Caster Sugar
- ½ Cup (45g) of Slivered Almonds
- 1 Teaspoon of Almond Essence
- ½ Teaspoon of Bicarbonate of Soda
- ¼ Teaspoon of Baking Powder
- ¼ Teaspoon of Freshly Ground Sea Salt

Method:
- In a large mixing bowl cream together the softened butter and the caster sugar until light and fluffy
- Add the almond essence and mix well
- In another mixing bowl combine the flour, the bicarbonate of soda, the baking powder and the salt
- Gradually add the combined dry ingredients to the creamed mixture
- Fold in the slivered almonds
- Preheat oven to 1500C
- Drop rounded teaspoons of mixture roughly 5cm (2”) apart onto non-greased baking trays
- Place loaded baking trays into the preheated oven and bake at 1500C for 22 – 24 minutes or until lightly browned
- Once cooked, remove the almond cookies from the oven and allow them to cool on the baking trays for 2 minutes before transferring them to wire racks to cool completely
- When cooled completely transfer the almond cookies to an airtight container ready for serving
Yield: These portions will yield around 4 dozen scrumptious almond cookies
Serving: Almond cookies are really awesome when served with beverages such as coffee, café late, Mocha, tea, milk, milkshakes etc. They also make great additions to any mixed cookie jar/plate as well as delicious lunch box treats for kids of all sizes.
