Apple Peach Mini Crumbles Recipe

Ingredients:
- 1 c sliced fresh peaches
- 1 apple, sliced and stewed
- Vegetable cooking spray
- 2 T brown sugar
- 1/3 c rolled oats
- 1/2 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 2 tsp reduced-calorie margarine, melted
- 1 sheet puff pastry
- 1 c custard
- 2 scoops ice cream

- 3x bowls

Method
- Peel, slice and remove core form apple
- Place into a saucepan with 1/2 c water and 1T brown sugar. Simmer for 15 minutes until apple is soft.
- Add peaches to apple mixture.
- Cut pastry to fit muffin mould. Spray mould. Gently fit pastry into mould.
- Arrange peaches and apples in bottom of pastry cases.
- Combine oats, remaining sugar, cinnamon, and nutmeg in a small bowl, stirring well. Add margarine and stir until blended.
- Sprinkle mixture over apple and peaches and bake at 180˚c for 30 minutes. Serve warm with custard and ice cream. ( Ice cream is optional )
