Bailey’s Irish Cream White Chocolate Pudding

You can substitute any type of chocolate you like in this recipe.

Ingredients

  • ½ cup Heavy cream or Whipping cream
  • 1/4 cup Sugar
  • 1/4 cup Corn starch
  • 1 cup Milk
  • ½ cup Bailey`s Irish Cream
  • 1 Egg yolk
  • 3-4 ounces chopped White chocolate

Method

  1. In a saucepan mix together cornstarch and sugar
  2. Pour in milk and whisk until fully dissolved
  3. Whisk in cream and egg yolk
  4. Whisk constantly over medium heat 4-5 minutes until it comes to a full boil (don`t forget to keep whisking)
  5. Remove from heat and add the Bailey`s Irish Cream
  6. Melt chocolate into mixture until smooth
  7. Pour pudding into serving dishes and cover with cling wrap
  8. Allow pudding to cool completely and garnish with a dollop of freshly whipped cream and semi-sweet chocolate shavings

    This one sounds wonderful! It would make a great company dessert and would probably be good in a graham crumb crust too.

    it doesn seem to harden!!! was a bad & terrible experience..i suspected that the recipe is incomplete..probably some gelatine would help to harden the mixture into a pudding..

    I have used both dark and white chocolate in this recipe and it has always worked for me.
