Bico (Rice Cake)

Five star recipe for your favorite rice cake, Great for any occasion.
This recipe is great. even the pickiest of eaters will enjoy this treat.
Ingredients:
2 cups sticky rice
1 cup brown sugar
2 cups coconut milk diluted with warm water
1/2 cup coconut milk undiluted
1 tsp. salt
a pinch of anise seeds
Directions:
Wash the sticky rice well and soak it for 2 hours. cook as ordinary rice using mixture of brown sugar., diluted coconut milk, salt, and anise as cooking liquid.
When Rice is cooked and dry, transfer it to a thin or low Pyrex dish which is greased bottom and sides. Smooth the top and top it with the undiluted or pure coconut milk. sprinkle top with brown sugar. bake at 375 for 20-30 minutes.
