Blueberry Granita

A delicious, refreshing dessert. No ice cream make needed.

2 1/2 c. fresh blueberries

1/2 c. sugar

3/4 c. water

1 tsp. finely grated lemon rind

1 tbsp. lemon juice

1.  Combine blueberries & sugar in food processor & blend til smooth.  Strain through sieve, stirring w/ spoon to extract pulp & juice.  Discard seeds.  Add water & lemon rind & juice to blueberry puree.  Pour mixture into shallow  dish or pie plate.  Place in freezer & freeze 8 hrs. or overnight.  Scrape w/ fork til mixture is like shaved ice.

Serves 4.
