Brown Sugar Iced White Chocolate Dreams

Lip-smacking brown sugar iced white chocolate dreams are oh so easy to make budget friendly treats that are equally at home in the cookie jar or as lunch box treats.

White Chocolate Dreams Ingredients:

  • 2 Cups (300g) of Sifted Plain Flour
  • 1¾ Cups (295g) of White Chocolate Chips
  • 1 Cup (250g) of Cooked Mashed and Cooled Pumpkin or Winter Squash
  • 1 Cup (250g) of Softened Butter
  • 1 Cup (120g) of Chopped Pecan Nuts
  • ½ Cup (115g) of Caster Sugar
  • ½ Cup (115g) of Firmly Packed Soft Brown Sugar
  • 1 Egg
  • 3½ Teaspoons of Mixed Spice
  • 2 Teaspoons of Vanilla Extract
  • 1 Teaspoon of Baking Powder
  • 1 Teaspoon of Bicarbonate of Soda

Note: To produce 1 cup (250g) of cooked mashed pumpkin or winter squash you will need to process about 5 cups (750g) of cubed raw pumpkin

Brown Sugar Icing Ingredients:

  • 1½ Cups (185g) of Confectioners’ Sugar
  • ½ Cup (115g) of Firmly Packed Soft Brown Sugar
  • ¼ Cup (60g) of Butter
  • ¼ Cup (60ml) of Milk

Method:

  1. Prepare 1 cup (250g) of cooled mashed pumpkin or winter squash
  2. In a large mixing bowl cream together the softened butter, ½ cup (115g) firmly packed soft brown sugar and the caster sugar until light and fluffy
  3. Beat in the egg, the vanilla extract and the cooled mashed pumpkin (or winter squash)
  4. In another mixing bowl combine the flour, the baking powder, the bicarbonate of soda and the mixed spice
  5. Gradually add the dry ingredients to the creamed mixture and mix well
  6. Stir in the white chocolate chips and the chopped pecan nuts
  7. Preheat oven to 1800C
  8. Drop rounded teaspoons of white chocolate dream dough roughly 5cm (2”) apart onto non-greased baking trays
  9. Place loaded baking trays into the preheated oven and bake at 1800C for 12 – 14 minutes or until the white chocolate dreams are firm
  10. Once cooked, remove the white chocolate dreams from the oven and transfer them to wire racks to cool

Brown Sugar Icing Method:

  1. In a small saucepan combine ½ cup (115g) of firmly packed soft brown sugar and ¼ cup (60g) of butter and bring to a boil
  2. Cook mixture over a medium heat for about 1 minute until slightly thickened
  3. Remove from heat and allow mixture to cool for 10 minutes
  4. Add the ¼ cup (60ml) of milk and beat until smooth
  5. Beat in 1½ cup (185g) of confectioners’ sugar
  6. Note: You may need to add some extra confectioners’ sugar in order for the icing to reach your desired consistency
  7. Use a spatula or broad flat bladed knife to spread the brown sugar icing over the cooled white chocolate dreams
  8. Set the iced white chocolate dreams aside for the brown sugar icing to set
  9. With the icing set transfer the brown sugar iced white chocolate dreams to an airtight container to await serving

Serving:

  • These portions will yield around 4 dozen scrumptious brown sugar iced white chocolate dreams
  • Brown sugar iced white chocolate dreams are really awesome when served with beverages such as coffee, café late, Mocha, tea, milk, milkshakes etc.
  • They also make great additions to any mixed cookie jar/plate as well as delicious lunch box treats for kids of all sizes.
