Preparing cake from Santiago.
Ingredients
· 4 egg yolks
· 2 clear egg
· 75 g butter
· 125 g ground almonds
· 25 g flour
· 1/2 teaspoon lemon zest
· 125 g sugar
· 3 tablespoons icing sugar

First turn on the oven at medium temperature. Melt the butter in a small saucepan and let the fire tune. Besides we beat the yolks with the sugar and 2 tablespoons hot water until it becomes spongy texture. Then add the butter and mix well.
Once mixed add the zest, flour and almonds, mix well. We beat the egg whites until stiff and add them. We again trying not to mix the dough rise.
Following a round mold greased with butter and cast mass. Place in the oven, over medium-high, about 30 minutes. Finally we got the cake from oven, let cool and stripper.
To decorate the cake in the traditional style of Santiago drew a cross on a sheet of paper, cut it out and put in the center of the cake. Then sprinkle with icing sugar and serve.
