Bailey’s Irish Cream Cheesecake
Bailey’s Irish Cream plus cheesecake…if your mouth is not watering, then I don’t know if you are of the human gene pool!

Crust Ingredients:
1 ½ sleeves of crushed graham cracker
1 stick of melted butter
1/3 cup Sugar
Cheesecake Filling Ingredients:
24 ounces of room temp cream cheese
5 large eggs, separated
1 1/2 cups sugar
2 envelopes of gelatin
¾ c. of water
3 Tbsp of cocoa
1/2 cup Bailey’s Irish cream
1 pint of whipping cream
Crust Directions:
1. Mix all three ingredients together.
2. Press into the bottom and sides of a spring-form pan.
3. Bake at 350 degrees for 10 minutes.
4. Set aside.
Cheesecake Directions:
1. Add gelatin to ¾ cup of water.
2. While gelatin is softening, mix egg yolks with 1 cup of sugar in a boiler.
3. Add gelatin to boiler and cook over medium heat, stir until mixture just thickens and starts to bubbles.
4. Set gelatin mixture aside to cool.
5. Beat cream cheese until it is a fluffy and light texture.
6. Beat in cocoa.
7. Beat in Bailey’s Irish Cream.
8. Slowly add gelatin and mix well.
9. Beat egg whites in a separate bowl until soft peaks form.
10. Add ½ cup of sugar to egg whites and continue to beat until stiff peaks form.
11. Fold peaks into the cream cheese mixture.
12. Whip the whipping cream, and gently fold into cream cheese mixture.
13. Pour into the crust, cover, and chill overnight.
You can end the recipe here and have a wonderfully tasting dessert. However, there are some easy ways to dress the Bailey’s Irish Cream Cheesecake presentation up. Try a nice drizzle of chocolate across the top or some bitter sweet chocolate shavings. You could also make an extra batch of whipped cream and pipe it across the top, then dust with cocoa.

Great cheesecake! I never thought of using Bailey’s Irish Cream for a cheesecake. I am salvitating as I write this. I’ll make it for the fourth of July. My family loves cheesecake. My daughter invited herself over since we have a pool. She came over with my grandson to swim for Father’s Day. Don’t get me wrong, she is welcome over our house anytime to use the pool or visit.
