Cake “Guest on the Doorstep”

Easiest cake ever.

This cake is very true to its name. You can make it in 15 minutes, right after your friend called you that she is on her way to your house or your child tells at 9 pm that tomorrow he need to bring a dish to a potluck lunch at school.

Ingredients

You will need 2 eggs, 1 cup of sugar, 1 cup of flour, 2-3 tart apples (or 1 cup of cranberries), an 8” cake pan. Grease and flour a cake pan. Core and peel apples and cut them in 1 inch pieces. Put apples in the cake pan. Get oven to 350 degrees Fahrenheit. Beat eggs and sugar with a whisk for about 1 minute, add flour and mix together. Pour over apples in the pan.

Method

Bake for 30-35 minutes or until golden and a toothpick comes out clean. Take out of the oven, let sit for 5 minutes and invert on the cake plate. Let it cool completely. You can sprinkle cake with powdered sugar or eat it as is.

If you don’t have apples or cranberries you can use any fruit (pears, raisins, blueberries, etc).
