Carrot Buns or Rock Cakes
Another interesting way of making use of carrots. Your child will enjoy it. This a way for adding vitamin A or carrots in the diet.
Ingredients
- 4 cups flour
- 1 ½ cups sugar
- 1 cup grated carrots
- I/2 cup ¼ inch diced carrots
- 8 ozs. Butter
- 1cup water
- 4 tbsp baking powder
- 1 egg
- 1 pinch salt
- 1tsp nutmeg
- ½ tsp vanilla
- ¼ tsp cinnamon
Method
- Put dice carrot into the 1 cup water boil when cooked; add ¼ cup sugar and boil until liquid dries out
- Cool quickly you may use the freezer.
- Measure all dry ingredients and put into a bowl
- Add butter and cut in the flour, mixture with a knife
- Using the finger tips and hold had at least ten inches above the bowl- Rub in butter until mixture looks like fine bread crumb.
- Add grated carrot and stir in with a knife use knife to mix in.
- Add cool carrot cubes leave a few to garnish top of buns.
- Use hand and form mixture into a dough and knead for three minutes
- Shape the dough into twelve buns and put on a greased tin sheet
Bake for 15-20 minutes into an oven 400° F.
