Carrot Buns or Rock Cakes

Another interesting way of making use of carrots. Your child will enjoy it. This a way for adding vitamin A or carrots in the diet.

Ingredients

  • 4 cups flour
  • 1 ½ cups sugar
  • 1  cup grated carrots
  • I/2 cup ¼ inch diced carrots
  • 8 ozs. Butter
  • 1cup water
  • 4 tbsp baking powder
  • 1 egg
  • 1 pinch salt
  • 1tsp nutmeg
  • ½ tsp vanilla
  • ¼ tsp cinnamon

Method

  1. Put dice carrot into the 1 cup water boil when cooked; add ¼ cup sugar and boil until liquid dries out
  2. Cool quickly you may use the freezer.
  3. Measure all dry ingredients and put into a bowl
  4. Add butter and cut in the flour, mixture with a knife
  5. Using the finger tips and hold had at least ten inches above the bowl- Rub in butter until mixture looks like fine bread crumb.
  6.  Add grated carrot and stir in with a knife use knife to mix in.
  7. Add cool carrot cubes leave a few to garnish top of buns.
  8. Use hand and form mixture into a dough and knead for three minutes
  9. Shape the dough into twelve buns and put on a greased tin sheet

Bake for 15-20 minutes into an oven 400° F.
