Chocolate Brandy Cream

Here is a mouthwatering cream recipe. That has, two of My favorite ingredients, chocolate and brandy. The extraordinary taste of chocolate, coffee and brandy mixed, together into a chilled dessert is ambrosial.

This sweet and savory, chocolate brandy cream recipe, makes four servings. It has the delectable taste of chocolate mixed with, a little coffee essence and My favorite, brandy. Then the chocolaty mixture is folded into a rich cream and chilled to perfection.

Ingredients

  1. 6oz dark chocolate
  2. (at least 70% cocoa solids, broken into pieces)
  3. 10fl oz whipping cream (I use coffee flavored) 
  4. 2 tablespoons brandy
  5. 1 teaspoon coffee essence
  6. 1 egg white

Preparation

First put the chocolate in a heat-proof bowl, placed over a saucepan of simmering water, and leave to melt slowly, stirring occasionally. Then allow the melted chocolate, to cool slightly. Next pour the cream, into a small bowl and whip, until it forms soft peaks. Now gently stir, the brandy and coffee essence into the chocolate.

Mix, together gently until blended, then fold in the whipped cream; using a metal spoon. Whisk the egg white in a small bowl, until stiff. Then gently fold into the chocolate mixture. Finish by spooning the mixture, into four tall glasses, and chill for at least 2 hours before serving.
