Chocolate Mayonnaise Cake

This cake turns out so moist and creamy, everyone will be asking for your secret.

Ingredients

  • 1 cup Mayonnaise
  • 2 cups all purpose flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1 1/4 cup sugar
  • 1/4 tsp. salt
  • 1 cup boiling water
  • 1/2 cup unsweetened cocoa
  • 1 tsp. vanilla

Method

  1. Cream sugar and mayonnaise
  2. Combine flour, baking powder, salt and baking soda.  Add to mayonnaise mixture.
  3. Combine cocoa with boiling water.  Gradually add to other mixture.  Add vanilla.
  4. Pour into well-greased 9×9 pan or two round cake pans (9×13 spreads too thin!)
  5. Bake at 325 degrees for about 45 minutes; until cake leaves side of pan or toothpick comes out clean when inserted.  Make sure center of cake is done.

Hint: Put a layer of waxed or parchment paper on bottom of pan so cake does not stick.
