Chocolate Mousse Bombe

You can make it more enticing by putting a layer of chocolate cake at the bottom.

1 cup dark chocolate, chopped

2 tablespoons cream

10 tablespoons cream

1 tablespoon sugar

4 egg yolks

1 tablespoon sugar

2 teaspoons unflavored gelatin

(1)  Melt the chocolate with 2 tablespoons cream. Set aside.

(2)  Whip the remaining cream with sugar until soft peaks stage.

(3)  Beat the egg yolks with a tablespoon of sugar.

(4)  Soften the gelatin in some water then heat to dissolve completely. Add to the chocolate mixture.

(5)  Add some of the chocolate mixture into the beaten eggs. Blend well then add in all of the chocolate mixture. Fold int he whipped cream.

(6)  Pour mixture into molds then chill to set. For ease in unmolding, you can line the molds with plastic wrap.

(7)  If you want to add a layer of cake: Cut the cake into the size of the molds. Fill the molds 3/4 of the way with the mousse. Top with the cake, pressing lightly. Chill to set. To serve, unmold on a plate so the cake layer is at the bottom.
