Chocolate Zucchini Cake

Great simple recipe for using zucchini. I know that I always have a hard time getting my kids to eat zucchini until I make a chocolate cake and then it’s easy.

Ingredients:

½ cup butter, creamed

½ cup vegetable oil

1 ¾ cup sugar

2 eggs

1 teaspoon vanilla

½ teaspoon cinnamon

1 teaspoon baking soda

½ teaspoon cloves

½ cup sour milk

4 tablespoons cocoa

2 cups zucchini, grated

2 ½ cups flour

¼ cup chocolate chips

First cream the butter, then mix in the next nine ingredients.  Now fold in the zucchini until well mixed and then fold in the flour until no white remains.  Sprinkle with ¼ cup of chocolate chips.

Bake in a 9”x 13” pan at 350 degrees Fahrenheit for 40-50 minutes.

    This is also very good with double chocolate frosting on it also.
