Chocolate Zucchini Cake.
- 2 and 1/2 cups flour
- 1/2 cup margarine
- 1 and 3/4 cup sugar
- 1/2 cup buttermilk
- 2 cups unpeeled,shredded raw zucchini squash
- 1 tsp. soda
- 1 tsp. salt
- 1 tsp. vanilla
- 1/4 cup cocoa
- 1/2 cup oil
- 2 eggs
- Mix together. Pour into 13 by 9 inch baking dish. On top,spread one 6-ounce package chocolate chips and 3/4 cup chopped pecans. Bake 325 degrees for 55 minutes.
