Christmas Cake
A great and simple way to make the most inexpensive, delicious Christmas cakes.
Ingredients
• 250 g butter
• 1 1/3 cups brown sugar
• 5 large eggs
• 3 teaspoons mixed spice
• 1 teaspoon of grated nutmeg
• 1teaspoon of cinnamon
• 1 ½ cups of seeded raisons
• 2 cups of sultanas
• ¾ cup of currants
• 1 ½ cups of plain flour
• 1 cup of self-raising flour
• 1/3 cup mixed peel
• 1/3 cup of cherries
• 1 cup of almonds
• 500ml of rum
• 5 tablespoons of caramel
Method
1. Prepare fruit. Cut raisins and cherries In halves.
2. Blanch almonds and cut into fine strips.
3. Mix all fruit together.
4. Sift flour , rising and spices.
5. Beat butter and sugar to a cream.
6. Beat all the eggs in a separate bowl and add to mixture gradually.
7. Add caramel, coffee and grated orange rind.
8. Gradually add dry ingredients.
9. Add fruit, juice and rum and mix well.
10. Spoon into a paper-lined tin, hollow centre out a little.
11. Smooth top over with a wet palm of hand.
12. Place in a moderate oven. After 10 minutes drop temperature to 150˚c
13. Continue baking until cake is cooked.
14. Allow to cool in the tin.
