Six festive recipes for the holiday.

Christmas Salad

Ingredients

12 oz. Cool Whip, thawed

1 large can crushed pineapple, drained

1 c. chopped nuts

1 can cherry or strawberry pie filling

1 can sweetened condensed milk

Method

Mix all the ingredients together. Chill overnight in an airtight container.

Christmas Nut Cake

Ingredients

1 qt. chopped pecans

2 (8 oz) boxes chopped dates

2 (7 oz) cans shredded coconut

2 (14 oz) cans sweetened condensed milk

Method

Mix all the ingredients together in a large bowl, adding a little water if the mixture seems dry. Pour into a well greased 10-inch cast iron skillet. Bake in preheated 350 degree oven for 1 hour. Let cool before flipping out of the cast iron skillet.

Christmas Wreaths

Ingredients

1/2 c. margarine

30 large white marshmallows

1 tsp. vanilla flavoring

3 c. corn flakes

green food coloring

red hot cinnamon candies

Method

Place margarine and marshmallows in a 3-quart casserole dish. Cook in microwave on High for 3 to 4 minutes  or until marshmallows are melted, stirring halfway through cooking time. Stir in the vanilla flavoring and a few drops of green food coloring. Blend in the corn flakes and mix well. Drop by teaspoonfuls onto a wax paper-lined baking sheet. Shape into small wreaths and add the red hot cinnamon candies to each wreaths for the appearance of holly berries.

Pecan Christmas Candy

Ingredients

2 lb. powdered sugar

2 sticks margarine, melted

4 c. chopped pecans

2 c. shredded coconut

24 oz. chocolate chips

1/4 block paraffin wax

1 can Eagle Brand milk

Method

Mix all the ingredients together except for the chocolate chips and paraffin wax. Roll into small balls. Melt the chocolate chips and wax. Dip the balls into the chocolate mixture. Set aside and let cool.

Christmas Wassail

Ingredients

2 qt. apple cider

4 c. orange juice

3/4 c. clover honey

juice of 2 lemons

4 (2-inch) sticks cinnamon

2 tbsp. whole cloves

2. tbsp. whole allspice

3/4 tsp. grated nutmeg

Method

Combine all the ingredients in a large pot. Cook over medium heat until hot. Simmer for 10 minutes. Strain out the spices. Serve hot.

Hot Christmas Punch

Ingredients

1 (6 oz) pkg. strawberry Jell-O

4 c. hot water

1 (46 oz) can pineapple juice

1 small can frozen orange juice concentrate

1 small can frozen lemonade concentrate

1/2 gal. sweetened tea

2 or 3 cinnamon sticks

1 tbsp. cloves

Method

Mix Jell-O with hot water. Dilute orange juice and lemonade as directed on containers. Stir all the ingredients together in a large pot. Slowly bring to a boil and let simmer for 20 minutes. Serve hot.
