Coconut Cake (Almost Homemade)

If you like coconut, you will love this.

This is a wonderful cake that can be made anytime of year. It is simple, but it will seem like you worked hard on it.

Ingredients

  • One box of white cake mix. (Any brand will do, you will need ingredients it may call for)
  • One can of sweetened condensed milk.
  • One small can of cream of coconut (can be found in the area of the store you find drink mixers like pina colada)
  • One container of whipped topping
  • One bag of shredded coconut
  • Rectangle baking dish (13X9 is the best size)

Preparation

  1. Prepare the cake according to the directions on the box. When the cake is finished cooking let it cool IN the pan.
  2. Once it is completely cooled poke holes in the cake with a fork or a butter knife, make sure you poke all the way through the cake.
  3. Now you pour the sweetened condensed milk evenly over the cake, do the same with the cream of coconut. The cream of coconut will be thick; you will probably need to stir it to get it to pour smoothly. You could even mix the sweetened condensed milk and the cream of coconut together and pour it over the cake.
  4. I like to put the cake into the refrigerator over night, but it isn’t necessary. You can let it soak for a few hours if you would rather.
  5. After the cake has soaked, leaving it in the pan frost it with the whipped topping, I like to put it on thick; finally sprinkle the coconut on top, use as much or as little as you would like.

When I make this cake at Christmas time, I like to add cherries to the top. This is a simple and delicious recipe, and if you love coconut it will hit the spot!

    Thanks for the recipe! It sounds scrumptious! I love coconut. I think I’ll try this out for Thanksgiving.
