Date and carrot kiddies cake – a healthier option.

For a healthy treat for the kids try this delicious recipe for date and carrot cake:

You will need:

250g softened butter, 250g soft brown sugar or golden castor sugar, 250g wholewheat flour, 5 eggs, vanilla essence, two carrots that have been washed, peeled and finely grated, 50g of chopped fresh dates, 50g of finely chopped walnuts, one teaspoon each of ground ginger powder and ground cinnamon powder, two teaspoons baking powder and the juice and grated rind of one fresh orange.

You can either make this cake the good old fashioned way by lovingly creaming together the butter with the sugar, then adding the beaten eggs to the mixture etc. etc. or do it the ‘No fuss’ (what the ‘eck way!) by bunging all the ingrediants into a mixing bowl and whisking on high speed with an electric whisk for ten minutes – my kinda way!

Pour the cake batter into a greased, lined tin and bake in an oven till golden brown. Here’s a tip for a really moist cake; half-fill another cake tin with water and place on the shelf directly under the shelf in the oven where you’re baking the cake. It will create steam in the oven which will keep the cooking cake moist. Check on the water-filled tin occasionally to make sure the water hasn’t all dissappeared!

Once the cake is cooked, remove from the oven, allow to cool completely on a wire rack and then top with a frosting made from 100g soft cream cheese, 25 g softened butter and 250g icing sugar. Enjoy!
