Diabetic Chocolate Decadence!

Below you will find some of the most delicious recipes that are not only suitable for diabetics but those planning on losing weight, those who are on a diet too or those who just plan to eat healthily.

BIRTHDAY CAKE FOR DIABETIC!

Ingredients:

  • 2 c. sifted cake flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 6 tbsp. softened margarine
  • 1 1/4 tsp. vanilla
  • 1/4 tsp. almond extract
  • 1 c. sugar
  • 1 egg
  • 3/4 c. milk
  • 1/2 c. sugar-free strawberry jam
  • 1 c. non-dairy whipped topping

Method:

  1. Preheat oven to 350 degrees.
  2. Line two 8 inch round cake pans with parchment paper or waxed paper.
  3. Sift together the flour, baking powder and salt. With an electric mixer at medium speed, cream together margarine, vanilla and almond extract until fluffy.
  4. Gradually
    add sugar, beating constantly. Add egg; beat until mixture is fluffy.
  5. Stirring with a spoon, add the dry ingredients alternately with milk.
  6. Stirring after each addition until batter is smooth. Pour into the prepared pans.
  7. Bake 25-30 minutes or until done.
  8. When cool spread the strawberry jam between the layers.
  9. Spread whipped topping onthe top.
  10. Store in refrigerator until just before serving.
  11. For added color you can add a drop of (your color choice) food coloring to the whipped topping before putting it on top of cake.

DIABETIC BREAD PUDDING!

Ingredients:

  • 1 slice white bread, cut in cubes
  • 2 or 3 tbsp. raisins
  • 1 c. skim milk
  • 1 egg, well beaten
  • 2 pkgs. artificial sweetener
  • 1 tsp. Vanilla

  1. Beat egg, milk, vanilla and sweetener together.
  2. Spray two (2) cup microwave dish with non-sticking vegetable spray.
  3. Arrange bread cubes and raisins in dish.
  4. Pour milk mixture over bread to moisten each cube.
  5. Sprinkle dash of nutmeg over top and microwave on high for five (5) minutes or until knife inserted in center comes out clean.
  6. Be careful not to overcook.


DIABETIC CAKE!

Ingredients:

  • 1 c. raisins
  • 1 1/2 c. water
  • 1/2 c. shortening
  • 1 egg
  • 1 c. oatmeal
  • 1 tbsp. sugar substitute
  • 1 c. flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 tsp. Cinnamon

Method:

  1. Boil raisins and water.
  2. Add other ingredients.
  3. Bake in a loaf pan at 350 degrees about 45 minutes or until done.
