Easy 123 Pineapple Guava Cheesecake

Easy, delicious and economical Pineapple Guava cheesecake.

Ingredients

Crust

  • 2 Cups of vanilla cookies (crumbled)
  • 2 oz. melted butter

Filling

  • 2 (8oz. packages) cream cheese
  • 1/2 Cup guava paste cut in squares
  • 1/4 Cup of sugar
  • 1/2 teaspoon vanilla extract
  • 2 eggs
  • 1 can of pineapple cut in pieces for topping

Method

  1. Preheat oven to 350 F.
  2. In a mixing bowl combine the vanilla cookies and the melted butter. Spread butter in a pie mold or a mold of your choice. Then flatten the crust on the bottom of the mold. You can also buy the crust already made.
  3. In a large mixing bowl, mix well the cream cheese, the guava paste, the sugar and the vanilla extract with an electric mixer.
  4. Add the two eggs and mix.
  5. Pour into the pie mold. Cover it with aluminum foil to avoid the brownish top.
  6. Bake for 40 to 50 minutes. Let it stand for 10 minutes. Add the pineapple topping. Refrigerate.
  7. Makes 8 servings.
