Easy 123 Pineapple Guava Cheesecake

Easy, delicious and economical Pineapple Guava cheesecake.
Ingredients
Crust
- 2 Cups of vanilla cookies (crumbled)
- 2 oz. melted butter
Filling
- 2 (8oz. packages) cream cheese
- 1/2 Cup guava paste cut in squares
- 1/4 Cup of sugar
- 1/2 teaspoon vanilla extract
- 2 eggs
- 1 can of pineapple cut in pieces for topping
Method
- Preheat oven to 350 F.
- In a mixing bowl combine the vanilla cookies and the melted butter. Spread butter in a pie mold or a mold of your choice. Then flatten the crust on the bottom of the mold. You can also buy the crust already made.
- In a large mixing bowl, mix well the cream cheese, the guava paste, the sugar and the vanilla extract with an electric mixer.
- Add the two eggs and mix.
- Pour into the pie mold. Cover it with aluminum foil to avoid the brownish top.
- Bake for 40 to 50 minutes. Let it stand for 10 minutes. Add the pineapple topping. Refrigerate.
- Makes 8 servings.
