Easy Fruit Cake
We are all aware Christmas is around the corner and things are going to get hectic. Christmas cake!? why not try this very easy fruit cake and just add icing if you please. Ideal for people that can’t have alcohol.
we are all aware Christmas is around the corner and things are going to get hectic. Christmas cake!? why not try this very easy fruit cake and just add icing if you please. Ideal for people that can’t have alcohol.
INGREDIENTS
300g of mixed fruit
100g of sugar
100g of butter or margarine
1/2 a pint of water
1 free range egg
200g of self raising flour
YOU WILL ALSO NEED
A medium sized sause pan
A 6/7 inch cake tin
METHOD
1. Place fruit, sugar, margarine or butter and water into pan and simmer for 20 minutes.
2. When done leave to cool then add egg and stir in the flour
3. Turn into the greased cake tin
4. Bake in a very moderate oven for 1 1/2 hours at gas mark 3/4 or 300/325f
Leave to cool them you can either decorate with icing or just sprinkle with icing sugar

Sadly, fruit cakes got a bum rap in my house when I was a kid; you know, the fruit cakes that have a shelf life of about a hundred years.

This sounds easy and delicious but I need to know what 300g is when converted to a cup, half cup, etc.??? We have a different system here in the states but maybe I can look in one of my cookbooks. Sounds really yummy though! Best regards from me.

Miss L…Thanks for the recipe, might have to give it a try with a few alterations to accommodate vegan cooking! For those wondering about metric conversion, just remember that 1 gram is equivalent to 0.035 ounces (dry measure) and one pound is equivalent to 453.59 grams.

Miss L…sounds you cook like me…if the batter is too dry, just slosh in some more liquid and if it is too thin, sprinkle in a bit more flour to thicken it up
