Easy to Make Chocolate Coconut Tray Bake
This tray bake recipe is ideal for busy moms who have been persuaded to cook for the local school cake stall. It takes minimal effort and has few ingredients.

Those of you who already know me will be well aware that I love my food but I’m always looking for the easy and cheap options! I discovered this recipe on the web and it sounded so quick and easy. It’d make a good alternative to whipping up a cake particularly if you’re in a rush and have promised a tray bake to your kid’s school cake stall. And if you cut it into small squares it makes an ideal petit fours for putting on a dining table to nibble with after dinner coffee and liqueurs at a more formal dinner party Or how about handing them out to hungry ghosts and ghouls turning up on your doorstep on Hallowe’en!
Ingredients
- 100 g (3.5oz) Butter
- 250 g (8.8oz) Unsweetened desiccated coconut
- 220 g (7.8oz) Caster sugar
- 2 Medium eggs, lightly beaten
- 150 g (5.3oz) Good quality dark chocolate, chopped
Method
Preheat the oven to 180C/160C fan/350F/Gas 4. Line a shallow 20 x 30cm (approx 12″ x 8″) tin with baking paper. In a small saucepan, melt the butter and leave it to cool.
In a large bowl, mix the coconut and sugar together, then add the melted butter and lightly beaten eggs and stir to combine. Stir the chopped chocolate through the mixture.
Press the mixture into the prepared tin and bake for about 20 minutes until the cake is firm. Leave the slice in the tin for about 5 minutes after you’ve removed it from the oven, then cut into rectangles and transfer onto a wire rack to cool completely.
This is a change from bog standard coconut ice and twice as yummy!!
