Fruity Coffee Cake

published by Jo Oliver on Mar 27, 2009

You don’t have to drink coffee to enjoy this tasty morning treat. The recipe makes about 24 moderately sized pieces.

Ingredients

  • 1 ½ tablespoons of milk
  • 1 cup of powdered sugar
  • ¼ cup of brown sugar
  • 1 package of white cake mix
  • 1 tsp of cinnamon
  • 1 cup of sour cream
  • 3 eggs
  • ¼ cup of water
  • ½ cup of slivered toasted almonds
  • 1 can of pie filling (blueberry, cherry, apple, blackberry, strawberry, etc.)
  • 1/8 tsp of flour

Method

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl, beat cake mix, cinnamon, brown sugar, sour cream, eggs, and water until well blended.
  3. Pour mixture into a greased and flour dusted 13×9 inch glass pan.
  4. Top the mixture with sporadic spoonfuls of your favorite pie filling.
  5. Bake for 35 minutes
  6. In the meantime, mix powdered sugar and milk in a small bowl.
  7. Allow cake to cool for 20 minutes.
  8. Top the cake with almonds.
  9. Drizzle powdered sugar sauce over the cake.
  10. Serve!

Wow, this must be delicious! Would like to try baking it, but we do everything from scratch here in New Zealand, don’t know where I’d buy the -package of white cake mix- but could make up some… Thanks for sharing.
