Hippity Hoppity Berry Cake
This is one of my favorite all time cakes and its healthy, it contains berries <smile>
1 (18.5 oz) yellow cake mix
2 2/3 cup of water
2/3 cup vegetable oil
2 1/2 cups all purpose baking mix
2 1/2 cup non-dairy whipped topping thawed
1 cup raspberries , frozen, thawed and drained well
1/2 cup fresh blueberries
2 cups fresh strawberries, halved
2 cups fresh raspberries
Allow oven to preheat to 350 degrees.
Spray a 9×13 baking a pan with a non stick cooking spray. place the cake mix in a large mixing bowl.
Pour the water and oil into the cake mix.
Break the eggs into the bowl and blend to combine. This batter starts out quite running but will thicken when the baking mix is added.
Add the baking mix and blend until thickened. Beat with an electric mixer on medium speed only one minute.
Transfer the battered into the prepared pan.
Bake 30 minutes or until toothpick inserted in center comes out clean.
Remove the cake and allow it to cool completely on a wire rack.
Place the whipped topping in a bowl.
Add the thawed raspberries and mix until blended well.
Spread the mixture over cooled cake
Garnish the top with fresh fruit just before serving.
