How to Make a Marble Egg Sponge Cake

I love sponge cake, simply love its spongy feeling. There are many types of sponge cake recipes that I have tried. Here I would like to share a marble sponge cake recipe. A spongy marble egg sponge cake that I baked this afternoon with my daughters.

A marble egg sponge cake

Ingredient

  • 500gm Sponge cake mix
  • Approx.10 eggs
  • 110 gm Water
  • 165 gm Corn oil
  • a drop of purple colouring (or any colouring of your choice).

Methods

  1. Preheat the oven at 180C.
  2. Mix sponge cake mix and eggs into the mixer, beat at high speed for 2 minutes;
  3. Add water and mix for another 2 minutes until light and runny;
  4. Pour in corn oil and mix with hand thoroughly.
  5. Pour half of the batter into a lined baking container of any shape.
  6. Put in a drop of the purple colouring into the remaining batter (or any colouring of your choice) and mix thoroughly;
  7. Pour the purple coloured batter into the original batter, just mix them up a little;
  8. Baked for 25 minutes at 190C or until skewer come out clean.

Serving idea : Best serve with a cup of tea or coffee, or a glass of juice.    Keep the unfinished sponge cake in an air tight container to avoid the cake becoming dry when storing in the refrigerator.
