How to Make Blueberry and Lemon Cheesecake

Just follow these steps to a fun and easy recipe for a very tasty desert.

Cheesecake is one of my favorite desserts! Here i present you my mom’s recipe for Blueberry and Lemon cheesecake!

Ingredients

  • 50 g unsalted butter
  • 200g chocolate digestives, crushed
  • 125g caster sugar
  • grated zest
  • and juice of 1 lemon
  • 2 tablespoons cornflour
  • 400g cream cheese
  • 1 egg
  • 1 egg yolk
  • 200 ml double cream
  • 1 teaspoon vanilla extract
  • 200 g blueberries

Serves: 8 

Preparation: 15 mins plus cooling and chilling 

Cooking time: 55 mins

Preparation

  1. Preheat oven to Gas 4/ 180º C/ 350º F
  2. Melt the butter in a pan, then add the crushed digestives, mix and press into the base of an 18 cm loose – bottomed cake tin.
  3. Bake the base for 5 mins and allow to cool
  4. Mix the sugar cornflour, lemon zest and juice, then beat in the cream cheese. Gradually add the beaten egg and yolk, then stir in the cream and vanilla extract. Spoon mixture on to base
  5. Put the cake tin in a roasting tin and pour in enough water to come 1cm up the sides of the cake tin. Bake for 45-50 mins.Remove from the roasting tin, allow to cool, then refrigerate for 2 hours. Arrange the blueberries on top and serve.
