Hummingbird Cake
This makes a large cake. 20-30 servings.

This is filled with flavour of bananas, pineapple and walnuts. A good Christmas cake.
Hummingbird Cake
- 3 cups flour
- 2 cups sugar
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 3 eggs, beaten
- 1 cup cooking oil
- 1 1/2 teaspon vanilla
- 8 oz. can crushed pineapple, undrained
- 1 cup chopped walnuts
- 2 cups diced bananas
Frosting:
- 8 oz. package cream cheese
- 2 cups icing sugar
- 1 teaspoon vanilla
- 1/2 cup walnuts
- To prepare cake combine all dry ingredients in a large bowl.
- Add eggs, and oil and stir until moist.
- Do not beat.
- Stir in vanilla, pineapple, walnuts and bananas.
- Spoon into greased 9″ X 13″ pan.
- Bake at 350 ffor 25 to 30 minutes. Cool
- For frosting, cream together cream cheese, icing sugar and vanilla.
- Fold in walnuts.
- When cake has cooled, frost and serve.
