Hummingbird Cake

This makes a large cake. 20-30 servings.

This is filled with flavour of bananas, pineapple and walnuts. A good Christmas cake.

Hummingbird Cake

  • 3 cups flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 3 eggs, beaten
  • 1 cup cooking oil
  • 1 1/2 teaspon vanilla
  • 8 oz. can crushed pineapple, undrained
  • 1 cup chopped walnuts
  • 2 cups diced bananas

Frosting:

  • 8 oz. package cream cheese
  • 2 cups icing sugar
  • 1 teaspoon vanilla
  • 1/2 cup walnuts
  1. To prepare cake combine all dry ingredients in a large bowl.
  2. Add eggs, and oil and stir until moist.
  3. Do not beat.
  4. Stir in vanilla, pineapple, walnuts and bananas.
  5. Spoon into greased 9″ X 13″  pan.
  6. Bake at 350 ffor 25 to 30 minutes. Cool
  7. For frosting, cream together cream cheese, icing sugar and vanilla.
  8. Fold in walnuts.
  9. When cake has cooled, frost and serve.
