Hummingbird Cake

Yummy dessert.

Ingredients

  • 3 c. all-purpose flour, sifted
  • 2 c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 3 eggs, slightly beaten
  • 1 1/2 c. vegetable oil
  • 1 1/2 tsp. vanilla flavoring
  • 1 (8 oz) can crushed pineapple, undrained
  • 2 c. chopped pecans, divided
  • 2 c. chopped bananas

Method

Combine flour, sugar, cinnamon, baking soda and salt in a large mixing bowl. Add eggs and vegetable oil, stirring until dry ingredients are moistened. Mix in vanilla, pineapple, 1 cup chopped pecans and bananas. Pour batter into 3 well greased and floured 9-inch cake pans. Bake at 350 degrees for 25 minutes or until knife inserted in center of cake comes out clean. Let cool completely in cake pans.

Cream Cheese Frosting

Ingredients

  • 2 (8 oz) pkg. cream cheese, softened
  • 2 sticks margarine, softened
  • 2 (1 lb) boxes confections sugar
  • 2 tsp. vanilla flavoring

Method

Combine cream cheese and margarine in a large mixing bowl, cream together until smooth. Add powdered sugar, beat until light and fluffy. Stir in vanilla. Spread frosting between layers, on top and sides of cake. Sprinkle top of cake with 1 cup chopped pecans.

    Yummy, and I am glad it didnt include humming birds, I have never heard of this kind of cake before

    same as kate. first i thought, “oh no, i hope it’s not a real humming bird” but this is a very tasty vegetarian cake dish. :)
