In-a-flash Peach Cake

My former boss shared this recipe to me. And it is my all-time favorite dessert — a delicious, easy cake that doesn’t require icing at all….if you’ve never tried it, this holiday season is a good time to bake it! Some recipes call this a dump cake, but I rather call it "in-a-flash" cake.

In-a-Flash Peach Cake

1 28 oz can sliced peaches with liquid

1 box (18.25 oz) yellow cake mix

1 teaspoon almond extract

1/2 cup chopped nuts

1 stick butter, cut into small pieces

Preheat oven to 350 F.

Empty peaches into the bottom of one pam-sprayed 9×13 inch pyrex pan. Cover with the dry cake mix and press down firmly. Do not stir. Sprinkle almond extract. Dot butter evenly on top. Brush dry spots (cake mix not moistened) with water.

Bake for 45 minutes to 1 hour until cake is golden brown.

Eat while warm and serve with ice cream or Cool Whip.
