Irish Barm Brack Recipe

Traditional rich tasty Irish bread, great buttered and with a cup of tea!

IRISH BARM BRACK RECIPE

Ingredients

425ml (15 fl oz) brewed ordinary tea, cooled  (TIP – Why not use your own favourite tea?)
225g  (8 oz) light brown soft sugar
175g  (6 oz) sultanas
50g  (2oz) chopped candied peel
150g  (5oz)  self-raising flour
1 egg beaten

Preparation method

1. Put the tea, sugar, sultanas and candied peel into a bowl. Cover and leave to soak overnight.  It brings out the flavour and makes a moist Brack.
2. Preheat oven to 180 C / Gas mark 4. Grease and flour a 20cm round cake tin.
3. Sift the flour into the fruit mixture. Add the beaten egg and mix well.
4. Pour into the cake tin and bake in preheated oven for 1 hour and 45 minutes or until skewer inserted into centre of cake comes out clean. Leave in the tin for 5 minutes to loosen from the sides, then turn out onto a wire rack to cool.

Slice and butter it and have it with a cup of tea!
