Lamingtons

The best way to make some yummy lamingtons that the whole family will love.
Ingredients
• 125g of butter
• 2/3 cup caster sugar
• 2 large eggs
• Vanilla
• ½ cup of milk
• 2 cups of self-raising flour
• 1 block of chocolate
Method
1. Beat butter and sugar into a cream. Add the vanilla.
2. Add eggs one at a time and beat well. Sift flour.
3. Add flour and milk alternately and mix lightly into a soft dough.
4. Turn into a greased and floured shallow square or oblong tin.
5. Bake in a moderate oven for about half an hour.
6. When quite cold cut into squares about the size of a matchbox.
7. Put chocolate into a small glass bowl and sit it on top of a pot of boiling water until melted.
8. Dip each cake in melted chocolate then roll in coconut. Put in fridge until firm.
